Orange Chicken

This one is a lot of work but it is really yummy.

Sauce:
1 1/2 cups water
2 tablespoons orange juice
1 cup packed brown sugar
1/3 cup rice vinegar
2 1/2 tablespoons soy sauce
1/4 cup lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon minced ginger
1 teaspoon green onion
1/4 teaspoon crushed red pepper
5 teaspoons corn starch
2 teaspoons arrowroot
3 teaspoons water

Chicken:
4 chicken breast fillets
1 cup ice water
1 egg
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups flour

First make the sauce. Combine all ingredients except cornstarch, arrowroot and water. Bring up to a boil, remove from heat and let cool completely. Recipe suggests cutting chicken into chunks and marinading it in half the sauce mixture (but I never have time). Once sauce cools, combine cornstarch, arrowroot and water and add to mixture. Heat on high and stir constantly. Sauce will thicken very rapidly. Remove from heat and set aside to let cool. Mix together ingredients for batter - water, egg, baking soda, salt and flour - until just combined. Coat each piece of chicken with the batter and fry until chicken is cooked through.
